Whatever the choice, no true Bahamian island breakfast is complete without Johnny Cake, also called Journey Cake, or fresh home-made bread. Johnny Cake is a cross between British wheat-flour, soda bread and the corn bread of the American Deep South. When colonists traveled on long trips, the short cakes they carried were called “Journey Cake”. Almost every restaurant offers its special version of the bread as a choice replacing toast with the Bahamian breakfasts. |
